Wine The winemaking process for this Sauvignon is all about freshness through cool temperatures, from harvesting entirely by night, to crushing, fermentation and filtration all taking place at no more than 12 Celcius, followed by one month's lees ageing. Pale, bright, with youthfully verdant hues. The nose offers lashings of lime and grapefruit and hints of thyme and asparagus. Crisp, citrussy acidity provides good length and palate refreshment.
